Ingredients:
- 8 oz pork loin, thinly sliced
- 8 oz rice noodles
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/4 cup chopped scallions
- 1/4 cup chopped fresh cilantro
- 1/4 cup roasted peanuts, chopped
- Salt and pepper to taste
Instructions:
Cook the rice noodles according to package instructions, then drain and set aside
In a small bowl, whisk together hoisin sauce and soy sauce
Set aside
In a large skillet or wok, heat vegetable oil over medium-high heat
Add the sliced pork and stir-fry until it's no longer pink, about 3-4 minutes
Remove from the skillet and set aside
In the same skillet, add a bit more oil if needed and stir-fry the garlic and ginger for about 30 seconds, or until fragrant
Add the sliced onions and bell peppers to the skillet and stir-fry for 2-3 minutes, or until they start to soften
Return the cooked pork to the skillet and pour the hoisin-soy sauce mixture over the ingredients
Stir-fry for an additional 2 minutes
Add the cooked rice noodles to the skillet and toss everything together until well combined and heated through
Season with salt and pepper to taste
Serve the Hoisin Pork and Rice Noodle Stir Fry garnished with chopped scallions, fresh cilantro, and chopped roasted peanuts
