Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup mashed ripe bananas
- 1/2 cup chopped strawberries
- 1/4 cup unsalted butter, melted
- 1/4 cup milk
- 1 egg
- 1 teaspoon vanilla extract
- Whipped cream for topping
- Fresh strawberries and banana slices for garnish
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with cupcake liners
In a bowl, combine the flour, sugar, baking powder, baking soda, and salt
In another bowl, mix the mashed bananas, chopped strawberries, melted butter, milk, egg, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Do not overmix; lumps are okay
Spoon the batter into the cupcake liners, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into a cupcake comes out clean
Allow the cupcakes to cool in the muffin tin for a few minutes, then transfer them to a wire rack to cool completely
Once cooled, top each cupcake with a dollop of whipped cream and garnish with fresh strawberry slices and banana slices
